I photographed Seb Holmes at his Thai restaurant Farang in Highbury, London for Waitrose magazine. The word ‘farang’ means foreigner in Thai and is aptly named by the Buckinghamshire born chef who is now part of the new wave of non-Thai chefs in London. It also applies as Farang is based from the former premises of his step father’s recently closed long standing Italian restaurant San Danielle. Thai food, by an English Chef, in the setting of a restaurant which still maintained it’s Italian themed interiors - this was to be a year long residency before a permanent location was found for the restaurant and so the decor from the last restaurant was staying. For the portraits I needed to isolate Seb away from the majority of the interiors which overly suggested mediterranean food, bringing in a selection of fresh ingredients to suggest Thai cooking.
